Pork Fillet with Horseradish and Mustard Compote

Ingredients

oil
butter
garlic
2 tbsp horseradish cream
2 tbsp wholegrain mustard
2 pork fillets
2 granny smith apples
1 cup chicken stock
pumpkin or potato for mash to serve
steamed green veggies to serve

Equipment

Method

  1. melt butter in oil in pan
  2. thinly slice garlic and add to pan
  3. add horseradish and mustard to pan
  4. add pork to pan
  5. grate apples and add to pan
  6. add stock and simmer, turning pork and stirring so doesn't stick to reduce liquid to compote
  7. serve pork on bed of mash topped with compote and a side of steamed greens
