Tagsbreakfast pancake snack

Serves3 people for breakfast


1 cup self raising flour
1/2 tsp bi-carb soda
2 tbsp sugar
3/4 cup milk
1 tsp vinegar
1 egg
1 tbsp melted butter
1/2 tsp vanilla essence



  1. sift flour and bi-carb into a bowl, add sugar
  2. beat egg and combine with milk, vinegar and vanilla
  3. pour into flour and stir well
  4. melt butter, pour in and stir well
  5. if mixture is thick / lumpy add more milk or water
  6. fry on low-medium heat in butter, turning when bubbles appear all over the top of the pikelet


very good with wholemeal flour instead of white flour - need more milk though as it is more absorbent

very good with jam and cream

good as finger food with cream cheese, smoked salmon and dill

also good as full sized pancakes
