  1. Preheat oven to 180C fan forced
  2. Line a 12 muffin tin with patty pans
  3. Put the dry ingredients in a bowl
  4. Zest the oranges and add the zest to the bowl, then juice the oranges
  5. Add the juice and all the wet ingredients except the milk to the bowl
  6. Stir well and add just enough milk to just absorb all the flour and make a stiff batter
  7. Stir in the choc chips
  8. Spoon the mix evenly between the patty pans
  9. Sprinkle tops with coffee sugar
  10. Bake 15-20 minutes until a skewer comes out cleanly tops will brown
  11. Allow to cool 5 minutes then remove from pan and put straight into an airtight container (if using gluten free flour) the trapped steam will help keep them soft

Notes

Eat within 48 hours, they are delicious fresh but slowly turn into rocks
