Ingredients

500 g butter softened
1 cup icing sugar - generous
3 cup plain flour - generous
1/2 cup corn flour / corn starch
1/2 tsp vanilla essence

Equipment

Method

  1. cream butter with electric beater
  2. add vanilla
  3. work in icing sugar
  4. sift flour and corn starch over
  5. whip until fluffy and mixture "breaks" it should be able to be rolled
  6. drop from a spoon onto a greased baking tray
  7. use a wet fork to pattern top
  8. decorate with chocolate or dried fruit
  9. bake approximately 15 minutes
  10. cool on tray
  11. serve

this mixture is huge, I usually do a half batch
