Sweet Potato and Baby Spinach Salad

small sweet potatoes |

Equipment
Method
- preheat oven to 180C
- peel and slice sweet potatoes into very thin circles
- line a tray with baking paper and spread out sweet potato in a single layer
- bake approximately 30 minutes or until crispy, then remove and set aside to cool
- slice bacon into thin strips and fry until crispy, set aside on paper towel
- dice halloumi then fry in lemon juice until golden on all sides, set aside on paper towel
- put baby spinach in a bowl and sprinkle with sea salt, stir through
- dress spinach lightly with lemon juice, balsamic vinegar and virgin olive oil
- stir through halloumi, bacon and sweet potato
- add several handfuls of noodles immediately before serving
