Berry Muffins

Tagsberry dessert muffin snack

Serves25 cupcake sized muffins


2 cup self raising flour
3/4 cup brown sugar
1 cup berries (blueberries/blackberries/raspberries or a combo)
1 egg lightly beaten
3/4 cup milk
1/2 cup vegetable oil - canola or similar



  1. preheat oven to 200C
  2. sift flour into bowl, add sugar
  3. combine egg and milk, stir and add to flour
  4. add oil and stir well to make sure all ingredients combined
  5. add berries with a minimum of stirring to avoid breaking them
  6. line muffin trays and spoon in mixture
  7. bake approximately 25 minutes
  8. remove and cool on racks, dust with icing sugar


the bottom cooks faster than the top of these muffins so check them to make sure they don't burn

fresh or frozen berries both work well
