Fruit Crumble Cake

Ingredients

1 1/2 cup white flour
1/2 cup caster sugar
115 g butter
1-2 eggs lightly beaten
1x 400 g tin of fruit eg pears, apple
3 tsp baking powder

Equipment

Method

  1. preheat oven to 180C
  2. sift flour, baking powder and sugar into a bowl
  3. rub in butter
  4. crumble through egg
  5. grease and line cake tin
  6. press about 1/2 mixture into base of tin
  7. cover base in fruit
  8. sprinkle rest of crumble mixture on top
  9. bake for 45 minutes
  10. serve with custard or double cream

Notes

works very well as muffin size, reduce cooking time to approximately 20 minutes or until just browned on top
