Chicken Teriyaki Summer Rolls

Ingredients

rice paper circles
chicken breast or thighs
teriyaka marinade (Lee Kum Kee brand is great)
shallots
cucumber
mint
coriander
carrot

Method

  1. slice chicken into strips, marinate with teriyaki and cook, can be prepared in advance
  2. grate carrot
  3. slice cucumber removing seeds into strips, cut shallots into smaller lengths
  4. soak rice paper to instructions on packet
  5. fill centre of rice paper with chicken, carrot, cucumber, shallots and fresh herbs
  6. fold base over filling and pull back, turn over sides and roll to form a tube
  7. eat
