Chicken Teriyaki Summer Rolls
Ingredients

rice paper circles |

chicken breast or thighs |
|
teriyaka marinade (Lee Kum Kee brand is great) |
|
shallots |
|
cucumber |
|
mint |
|
coriander |
|
carrot |
Method
- slice chicken into strips, marinate with teriyaki and cook, can be prepared in advance
- grate carrot
- slice cucumber removing seeds into strips, cut shallots into smaller lengths
- soak rice paper to instructions on packet
- fill centre of rice paper with chicken, carrot, cucumber, shallots and fresh herbs
- fold base over filling and pull back, turn over sides and roll to form a tube
- eat
