Ingredients
| 220 g |
ling fillets |
| 1/2 tbsp |
fish sauce |
| 1/2 tbsp |
red curry paste |
| 1 |
kaffir lime leaf shredded (or dash of lime juice) |
| 1/2 tbsp |
coriander leaves |
| 1 |
egg |
| 10 |
green beens |
| 1/2 tsp |
rock salt |
| |
vegetable oil for cooking |
| |
sweet chili sauce to serve |
Equipment
- wizz (food processor)
- non stick pan
Method
- place ling, fish sauce, curry paste, lime, coriander leaves and egg in wizz and blend to smooth paste
- season with salt
- finely slice beans and stir through fish mix
- heat oil in non stick pan on medium to high heat
- fry spoonfuls of mix approximately 3 minutes each side
- serve immediately with sweet chili sauce
Notes
Also works as a main for two with a green salad and more coriander leaves
