Ingredients
| 3 tbsp |
white sugar |
| 3 |
eggs, seperated |
| 7 tbsp |
plain flour |
| 1 cup |
milk |
| 5 tbsp |
self raising flour |
| 1 cup |
water |
| 1 tsp |
vanilla essence |
Equipment
- crepe machine or heavy based fry pan
Method
- seperate eggs - set aside whites for later
- whisk sugar and egg yolks until sugar disolved
- add vanilla
- add plain flour and milk slowly alternating a little of each and whisking well in between
- add self raising flour and water in the same way
- refridgerate minimum 30 minutes - overnight is better
- when batter is cool, beat egg whites until fluffy and fold into batter
- fry in olive oil
- put cooked crepes in oven on low heat to keep warm while cooking remaining batter
- eat hot
Notes
great with sugar and lemon juice or jam
can also fill with stir fry or other leftovers for dinner or a snack
