Equipment
- oven
- wizz (aka food processor)
Method
- preheat oven to 180C
- bake whole sweet potatoes for about 1 hour or until cooked
- while still hot cut in half and scoop out the flesh
- mash or wizz the sweet potato
- add egg, nutmeg, cheese, salt and pepper and stir to combine
- gradually sift flour over and stir in to make dough
- divide dough into pieces and roll into lengths on floured surface
- cut lengths into 2cm pieces and put on a floured tray
- cook gnocchi in rapidly boiling salt water for about 1 minute or until they float
- serve hot with sage butter or other butter based sauce
Notes
you can also use potato instead of sweet potato in the gnocchi
