Sweet Potato Gnocchi

Ingredients

1 kg sweet potato
1 egg yolk
nutmeg
1/4 cup parmesan cheese
sea salt
pepper
1 1/2 cup plain flour

Equipment

Method

  1. preheat oven to 180C
  2. bake whole sweet potatoes for about 1 hour or until cooked
  3. while still hot cut in half and scoop out the flesh
  4. mash or wizz the sweet potato
  5. add egg, nutmeg, cheese, salt and pepper and stir to combine
  6. gradually sift flour over and stir in to make dough
  7. divide dough into pieces and roll into lengths on floured surface
  8. cut lengths into 2cm pieces and put on a floured tray
  9. cook gnocchi in rapidly boiling salt water for about 1 minute or until they float
  10. serve hot with sage butter or other butter based sauce

Notes

you can also use potato instead of sweet potato in the gnocchi
