Equipment
- oven
- baking rack - or foil stand for ham
Method
- preheat the oven to 160C
- take the skin off the ham leaving as much fat on the ham as possible
- score the ham in a diamond pattern
- stick cloves into the centre of each diamond
- mix all other ingedients together to form a glaze - paint liberally over ham
- wrap ham in foil and place ham on baking rack in lined baking tray
- bake approximately 20 minutes, remove foil and glaze again and rotate in oven
- bake another 20 minutes, glaze again and decorate with pineapple and lemon slices
- turn the oven up to 180C and return ham to oven another 10 minutes or so or until golden
- rest ham covered about 10 minutes before serving
- when serving cut against the bone
Notes
mix as much or as little of each ingredient as you think will be tasty - if you don't like one, leave it out
marmalade, orange juice and slices, apple and other fruits also taste pretty good
