Tagschicken filipino main poultry


2 kg chicken lovely legs or drumsticks
2 chorizo
button mushrooms
oyster mushrooms
enori mushrooms
2 tins of pinnaple*
1 tsp crushed garlic
1 tsp crushed ginger
1 tsp chilli
500ish mL chicken stock
bay leaves
brown onion
corriander (ground)
balsamic vinegar
terriaki sauce
soy sauce
mayo to serve
seasame seeds to serve



  1. chop choriso into small pieces and fry in wok, remove pat dry with paper towel and set aside
  2. coursley chop onion, cook in wok with garlic, ginger and chilli
  3. remove excess skin and fat from chickn and add to onion, sear on high heat as fast as possible
  4. add corriander, stock, shallots, glug of balsamic vinegar, terriaki sauce and soy sauce to taste and bring to boil
  5. reduce to simmer, add chorizo, mushrooms and bay leaves and cover
  6. when chicken cooked, add pineapple and stir through
  7. serve topped with mayo and seasame seeds with rice and steamed veggies


add more or less chilli, soy sauce, terriaki sauce to taste

* pineapple is the secret ingredient

don't cut the mushrooms they shrink a lot when they cook and absorb more flavour whole
