Pear Rocket and Parmesan Salad
Ingredients
200 g |
rocket leaves |
2 |
pears |
|
shaved parmesan cheese |
1/2 |
lemon juiced |
|
rock salt |
|
olive oil |
|
pepper (fresh ground) |
Method
- put rocket leaves in a bowl
- cover with a generous amount of rock salt
- sprinkle with generous amount of parmesan cheese and mix through
- finely slice pears (remove core but do not peel) and add to rocket
- squeeze lemon juice over
- drizzle with olive oil (not too much)
- touch of black pepper
- sprinkle with more cheese to serve
- serve immediately
