Ingredients

200 g	rocket leaves
2	pears
	shaved parmesan cheese
1/2	lemon juiced
	rock salt
	olive oil
	pepper (fresh ground)

Method

1. put rocket leaves in a bowl
2. cover with a generous amount of rock salt
3. sprinkle with generous amount of parmesan cheese and mix through
4. finely slice pears (remove core but do not peel) and add to rocket
5. squeeze lemon juice over
6. drizzle with olive oil (not too much)
7. touch of black pepper
8. sprinkle with more cheese to serve
9. serve immediately
