Prep time45 minutes
Cooking time1 hour 45 minutes, then leave overnight
Serves1 large pavlova

Ingredients

6 egg whites - no yolk
2 cup castor sugar (smallish)
1 1/2 tsp white vinegar
1 1/2 tsp vanilla essence

Equipment

Method

  1. preheat oven to 150C no fan
  2. beat egg whites in glass or metal bowl until really fluffy and dry
  3. add sugar slowly, 1 tbsp at a time making sure it disolves, mixture should look glossy
  4. fold in vanilla and vinegar using a spatular or metal spoon, make sure it is scooped off the bottom
  5. line a tray with foil or use an overnproof plate and pile mixute up so that it is approximately 20cm across
  6. smooth the sides so it is amost like a ball, leave a slight indent in the top
  7. cook approximately 45 minutes, then turn off the oven leaving the door closed for 1 hour and then open the door and leave in oven to cool completely - preferably overnight
  8. remove from oven, decorate with whipped cream and fruit and serve

Notes

strawberries, kiwi fruit and passion fruit are good for decorating
