beat egg whites in glass or metal bowl until really fluffy and dry
add sugar slowly, 1 tbsp at a time making sure it disolves, mixture should look glossy
fold in vanilla and vinegar using a spatular or metal spoon, make sure it is scooped off the bottom
line a tray with foil or use an overnproof plate and pile mixute up so that it is approximately 20cm across
smooth the sides so it is amost like a ball, leave a slight indent in the top
cook approximately 45 minutes, then turn off the oven leaving the door closed for 1 hour and then open the door and leave in oven to cool completely - preferably overnight
remove from oven, decorate with whipped cream and fruit and serve

strawberries, kiwi fruit and passion fruit are good for decorating
