Ingredients
90 g |
butter |
1 cup |
brown sugar |
1 cup |
honey |
2 tsp |
grated lemon rind (approx 1 1/2 lemons) |

plain flour |
1 cup |
self raising flour |
1 tsp |
bi-carb soda |
2 tsp |
ground ginger |
1 1/2 tsp |
ground cinnamon |
1 tsp |
ground cloves |
1/2 tsp |
ground nutmeg |
1/2 tsp |
ground cardamon |
1 tbsp |
caster sugar |
2 tbsp |
water |
1/2 tbsp |
gelatine |
Equipment
Method
- preheat oven to 180C
- melt butter on low heat
- add sugar and honey and stir until disolved
- set aside for 10 minutes
- combine flour, bi-carb and spices in a large bowl
- beat eggs and add to flour with butter mix
- stir to make a dough - if too floury add a tiny bit of milk
- roll dough to 1cm thick on floured surface
- grease flat tray with butter
- cut out cookies into house shape and place on tray
- bake approximately 10 minutes then stand 5 minutes
- while cookies are standing make the glaze
- combine caster sugar, water and gelatine in a small pot on low heat
- stir until disolved - do not boil
- remove cookies from tray and place on wire racks to cool
- paint with glaze while still warm
- join house together with royal icing and sweets
