Ingredients

90 g butter
1 cup brown sugar
1 cup honey
2 tsp grated lemon rind (approx 1 1/2 lemons)
2 eggs
5 cup plain flour
1 cup self raising flour
1 tsp bi-carb soda
2 tsp ground ginger
1 1/2 tsp ground cinnamon
1 tsp ground cloves
1/2 tsp ground nutmeg
1/2 tsp ground cardamon
1 tbsp caster sugar
2 tbsp water
1/2 tbsp gelatine

Equipment

Method

  1. preheat oven to 180C
  2. melt butter on low heat
  3. add sugar and honey and stir until disolved
  4. set aside for 10 minutes
  5. combine flour, bi-carb and spices in a large bowl
  6. beat eggs and add to flour with butter mix
  7. stir to make a dough - if too floury add a tiny bit of milk
  8. roll dough to 1cm thick on floured surface
  9. grease flat tray with butter
  10. cut out cookies into house shape and place on tray
  11. bake approximately 10 minutes then stand 5 minutes
  12. while cookies are standing make the glaze
  13. combine caster sugar, water and gelatine in a small pot on low heat
  14. stir until disolved - do not boil
  15. remove cookies from tray and place on wire racks to cool
  16. paint with glaze while still warm
  17. join house together with royal icing and sweets
