Beef and Vegetable Stew

400 g beef cubed
2 garlic cloves
1 onion
2 carrots
1 zucchini
4 mushrooms
3 potatoes
2 tbsp tomato paste
500 mL beef stock
plain flour
boiling water



  1. coat beef cubes in flour and fry in oil
  2. chop onion and garlic and add to beef
  3. chop all vegetables and add to pot
  4. add stock and stir through
  5. add tomato paste and stir in
  6. add enough boiling water to cover all the meat and vegetables
  7. add rosemary and pepper
  8. bring to boil stirring to prevent sticking
  9. simmer about 1 hour, add more boiling water as required so it doesn't dry out
  10. eat hot with crunchy bread
