Roast Lamb Rack with Red Wine Gravy

Ingredients

1 rack of lamb
fresh rosemary
fresh thyme
pepper
salt
250 mL red wine
3 garlic cloves
olive oil
flour
beef stock

Equipment

Method

  1. preheat oven to 160C
  2. score lamb and chop garlic and herbs and combine with oil
  3. cover lamb with herb and garlic oil
  4. put lamb in oven to stove dish (or just oven proof dish if no oven-stove dish)
  5. bake lamb approximately 1 hour check after 40 minutes
  6. remove lamb from oven, cover rack with foil and set aside to rest
  7. put oven-stove dish on stove or tip juices into saucepan
  8. add wine, more herbs, flour, stock and heat to nearly boiling to make gravy
  9. serve lamb with gravy

serve with roast vegetables
