Roast Lamb Rack with Red Wine Gravy

| 250 mL |
red wine |
| 3 |
garlic cloves |
| |
olive oil |
| |
flour |
| |
beef stock |
Equipment
- oven
- oven/stove dish (or roasting pan and saucepan)
Method
- preheat oven to 160C
- score lamb and chop garlic and herbs and combine with oil
- cover lamb with herb and garlic oil
- put lamb in oven to stove dish (or just oven proof dish if no oven-stove dish)
- bake lamb approximately 1 hour check after 40 minutes
- remove lamb from oven, cover rack with foil and set aside to rest
- put oven-stove dish on stove or tip juices into saucepan
- add wine, more herbs, flour, stock and heat to nearly boiling to make gravy
- serve lamb with gravy

serve with roast vegetables
