Orange Poppy Seed Cake

Serves 1 large cake or 12 cupcakes

Ingredients

220 g butter softened/nuttelex for FODMAP
220 g castor sugar
4 eggs
1 tsp vanilla essence
1 tbsp orange zest
90 g poppy seeds
240 g plain flour/gf flour for FODMAP
15 g baking powder
120 mL milk/ lf milk for FODMAP
orange syrup to serve - see recipe
cream to serve/lf cream or yoghurt for FODMAP

Equipment

Method

  1. preheat oven to 175C
  2. cream butter and sugar until light and pale
  3. add eggs 1 at a time and beat
  4. stir in vanilla, orange zest and poppy seeds
  5. sift flour and baking powder over and fold in
  6. fold in milk
  7. bake approximately 45 minutes
  8. serve with orange syrup and cream

Notes

Lemon Poppy Seed Cake substitute the orange zest for lemon zest and use lemon juice in the syrup instead of orange juice

Works really well with cream cheese icing instead of syrup

The left over fresh fruit can be used as decoration for the cakes

Works well as cupcakes, reduce cooking time to approximately 30 minutes for 12 large cupcakes

Fodmap variation use gf flour, lf milk and nuttelex instead of butter the normal cake is very moist so it comes out beautufully with GF flour
