Zucchini Bake

Serves6 people as main with salad

Ingredients

375 g zucchini (about 3 large zucchini)
1 brown onion
6 rashers of bacon
1 cup grated cheddar cheese
1 cup self raising flour
1/2 cup vegetable oil - canola or similar
5 eggs
2 carrots (large)

Equipment

Method

  1. preheat oven to 180C
  2. finely chop bacon and onion and saute in oil in small fry pan
  3. grate zucchini, cheese and carrots and combine with bacon and onion
  4. add oil and eggs and stir well
  5. sift flour over and fold through
  6. pour into greased oven proof dish
  7. bake for 30-40 minutes until golden on top
  8. serve hot

Notes

this works really well as savoury "dinner muffins" instead of one large dish use well greased mini muffin trays and reduce cooking time to 20-30 minutes

works as a vegetarian dish by just leaving out the bacon

can also use about 100g sliced ham instead of bacon - no need to precook
