375 g | zucchini (about 3 large zucchini) |
1 | brown onion |
6 | rashers of bacon |
1 cup | grated cheddar cheese |
1 cup | self raising flour |
1/2 cup | vegetable oil - canola or similar |
5 | eggs |
2 | carrots (large) |
this works really well as savoury "dinner muffins" instead of one large dish use well greased mini muffin trays and reduce cooking time to 20-30 minutes
works as a vegetarian dish by just leaving out the bacon
can also use about 100g sliced ham instead of bacon - no need to precook
