Serves1 caramel mud cake

Ingredients

60 g butter
1/2 cup brown sugar
2 tbsp cream
1 1/2 cup icing sugar

Equipment

Method

  1. melt butter in saucepan on low heat
  2. slowly add sugar and stir until it dissolves
  3. stir in cream
  4. gradually add icing sugar until it reaches a spreadable consistency
  5. spread quickly over cooled cake - the icing sets very fast

Notes

this is only enough icing to do the top of the cake - double it to ice the sides as well
