Ingredients

small brown onion |

rashers of bacon |

butter |

lean veal |
| 3 cup |
breadcrumbs |

parsley (fresh or dried) |

mixed herbs (dried) |

nutmeg |

lemon rind |

Equipment
- wizz (food procesor)
- bird for roasting (ie chicken or turkey)
Method
- finely chop onion and bacon, fry in oil until becomes transparent, set aside
- fry or grill veal then mince in food procesor or mince with knife
- combine onion, bacon, veal, breadcrumbs, herbs, lemon, salt and peper in a bowl
- melt butter and add to bowl
- add enough milk to make a sticky mixture and stir to comine
- force into every cavity of bird
Notes
extra stuffing that doesn't fit into the bird can be cooked by itself with a little more butter in a small covered casserole dish in the oven
