Poultry Stuffing

Tagspoultry roast

Servesfills one turkey or 2+ large chickens


1 small brown onion
4 rashers of bacon
30 g butter
400 g lean veal
3 cup breadcrumbs
2 tbsp parsley (fresh or dried)
1/2 tsp mixed herbs (dried)
1/4 tsp nutmeg
1/2 tsp lemon rind
1 egg
60ish mL milk



  1. finely chop onion and bacon, fry in oil until becomes transparent, set aside
  2. fry or grill veal then mince in food procesor or mince with knife
  3. combine onion, bacon, veal, breadcrumbs, herbs, lemon, salt and peper in a bowl
  4. melt butter and add to bowl
  5. add enough milk to make a sticky mixture and stir to comine
  6. force into every cavity of bird


extra stuffing that doesn't fit into the bird can be cooked by itself with a little more butter in a small covered casserole dish in the oven
