                | 100 g | Butter | 
        
            
                | 185 g | Castor sugar ( 1/2 + 1/3 cup) | 
        
            
                | 2 tsp | Vanilla paste | 
        
            
                | 2 | Eggs (large) | 
        
            
                | 1 1/3 cup | Plain flour | 
        
            
                | 2 tsp | Baking powder | 
        
            
                | 1/2 cup | Milk |

    Method
    
    
        - Line cupcake pan with patty pans
- Soften butter in microwave if needed 15 seconds on medium power
- Cream butter and sugar in mix master
- Beat in eggs one at a time
- Add vanilla and mix
- Add 2/3 cup flour and 1/4 cup of milk and gently mix until just combined
- Add remaining 2/3 cup flour and 1/4 cup milk with baking powered and mix until just combined
- Spoon into patty pans
- Bake in preheated oven 170C fan forced approximately 18 minutes
- Cool in the tray 10 minutes then remove and allow to cool completely before icing
Notes
    Minimal flour mixing, this recipe is quite fluffy
Fill 2 tsps per cupcake for 18 cupcakes or 3 tsp for 12
Can be frozen
