Equipment
Method
- cook pasta to al dente, strain and place in a bowl. Reserve some of the cooking liquid
- strip leaves off basil and place in blender with olive oil
- pulse until smooth - add a small amount of pasta cooking liquid if not blending
- pour over pasta and stir through
- dice feta and cut sundried tomato into strips
- add feta, parmesan, sundried tomato and pine nuts to pasta and stir through
- decorate with olives, more pine nuts and basil leaves, refrigerate until serving
