Kidney Bean Salsa Salad

2x 400 g cans of red kidney beans
4 tomatoes
1 yellow capsicum
1 green capsicum
2 spring onions
1/2 bunch fresh coriander leaves
2 tbsp lime juice


  1. rinse kidney beans and set aside
  2. seed and dice tomatoes
  3. dice capsicums
  4. very finely dice onions and coriander
  5. combine all ingredients and squeeze over lime juice
  6. stir together cover and refridgerate to allow flavours to develop
  7. eat


make the day before or even 2 days before the flavours get better over time
