Ingredients

cans of red kidney beans |

tomatoes |

yellow capsicum |

green capsicum |

spring onions |
1/2 |
bunch fresh coriander leaves |
2 tbsp |
lime juice |
Method
- rinse kidney beans and set aside
- seed and dice tomatoes
- dice capsicums
- very finely dice onions and coriander
- combine all ingredients and squeeze over lime juice
- stir together cover and refridgerate to allow flavours to develop
- eat
Notes
make the day before or even 2 days before the flavours get better over time
