Ingredients

12 mini burritos
1/2 red capsicum
1 jalapeno
fresh coriander leaves
grated cheese
butter

Equipment

Method

  1. butter each burrito on one side
  2. dice capsicum, jalapeno and corriander
  3. put the pan on med-low heat
  4. place burrito in butter side down
  5. scatter with capsicum, jalapeno, coriander and cheese
  6. cover with another burrito butter side up
  7. cook until crispy, flip and cook again until crispy 2-5 minutes each side
  8. remove from heat cut into 4 pieces and serve immediately

Notes

can replace the capsicum and jalapeno with mushrooms

can put in tray in oven covered in foil at 120C to keep warm until ready to serve
