Cauliflower and Bacon Soup

Ingredients
175 g |
bacon |
700 g |
cauliflower |
200 g |
potato |
1 |
brown onion |
2 tsp |
chicken stock powder |
1200 mL |
boiling water |
2 |
bay leafs |
|
sour cream to serve |
|
crusty bread to serve |
|
black pepper to serve |
Equipment
- large saucepan
- blender or stick mixer
Method
- dice and fry bacon until crispy, set aside
- cut cauliflower into florets
- dice potato
- dice onion and fry until clear in pan with bacon grease
- add potato to onion and stir to start browning
- add cauliflower and stir through onion and potato
- add chicken stock powder to water then tip over veggies
- bring to the boil stirring frequently
- add bay leafs and simmer covered approximately 30 minutes or until all the veggies are soft
- remove bay leafs, add cooked bacon, stir through and allow to cool slightly
- blend or stick mix until smooth
- serve warm with crusty bread, sour cream and lots of black peper
Notes
will freeze well if no cream is added, only add cream when serving
