Sweet Potato and Baby Spinach Salad

Ingredients

2 small sweet potatoes
100 g baby spinach (or more)
1 block halloumi cheese
6 rashers of bacon
deep fried noodles
sea salt
lemon juice
balsamic vinegar
virgin olive oil

Equipment

Method

  1. preheat oven to 180C
  2. peel and slice sweet potatoes into very thin circles
  3. line a tray with baking paper and spread out sweet potato in a single layer
  4. bake approximately 30 minutes or until crispy, then remove and set aside to cool
  5. slice bacon into thin strips and fry until crispy, set aside on paper towel
  6. dice halloumi then fry in lemon juice until golden on all sides, set aside on paper towel
  7. put baby spinach in a bowl and sprinkle with sea salt, stir through
  8. dress spinach lightly with lemon juice, balsamic vinegar and virgin olive oil
  9. stir through halloumi, bacon and sweet potato
  10. add several handfuls of noodles immediately before serving
