Ingredients

3	eggs
1 cup	butter
1/2 cup	Greek yoghurt (or plain yoghurt)
1 1/2 cup	Self Raising Flour
1 tsp	Vanilla Extract
2-3	passionfruits or a small can of pulp

Equipment

• oven
• patty pans - small is great
• mix master or lots of effort

Method

1. oven to 160
2. line patty pans
3. beat eggs, then add softened butter and sugar and beat until fluffy
4. add yoghurt, flour and vanilla and fold through then beat for 2 minutes
5. fold in passionfruit
6. pour mix into patty pans
7. bake for 12-15 minutes
8. allow to cool before decorating / eating

Notes

Larger cakes will take longer cooking times, medium cupcakes will take 20-30 minutes

decorate with icing sugar, cream cheese icing or more yoghurt. Also tastes good by themselves
