Capsicum Pasta Sauce

Cooking time30 minutes


1 spanish onion
2 cloves of garlic
fresh thyme
1 yellow capsicum
1 red capsicum
80 mL white wine
olive oil



  1. thinly slice onion and garlic and saute in olive oil on medium heat
  2. strip leaves of thyme and add to pan
  3. slice capsicums and add to pan and cook until softening
  4. add wine, cover and cook for approximately 20 minutes or until everything is very soft
  5. blend with a stick mixer until smooth


Will keep in an air tight container in the fridge for a few days - just heat before stirring through cooked pasta or gnocci
