Equipment
- large saucepan
- stick mixer or blender
Method
- thinly slice onion and garlic and saute in olive oil on medium heat
- strip leaves of thyme and add to pan
- slice capsicums and add to pan and cook until softening
- add wine, cover and cook for approximately 20 minutes or until everything is very soft
- blend with a stick mixer until smooth
Notes
Will keep in an air tight container in the fridge for a few days - just heat before stirring through cooked pasta or gnocci
