cut snakes into 2cm pieces pinching each slightly to make a squashed pillow shape
set aside on a tray and cover with a tea towel, cook just before serving
fill a pot with water, bring to boil, add salt then cook gnocci in 2-3 batches for approximately 2 minutes for each batch, remove with a slotted spoon and drain
transfer gnocci to sauce and serve immediately

Goes really well with capsicum sauce, white cheese sauce or any other simple pasta sauce
