Potato Gnocchi

Ingredients

700 g potatoes
2 egg yolks
1/2 cup parmesan cheese
1/2 tsp ground nutmeg
rock salt
1 cup plain flour

Equipment

Method

  1. preheat oven to 250C
  2. spread tray with salt and place potatoes on top
  3. bake 30-40 minutes or until tender
  4. remove from oven and allow to cool
  5. remove skins and put warm potato in a bowl
  6. mash then mix in egg
  7. grate cheese and add to potato
  8. add nutmeg and a pinch of salt and mix together
  9. turn out onto a floured surface and kneed lightly
  10. separate into 4 pieces and roll into long snakes
  11. cut snakes into 2cm pieces pinching each slightly to make a squashed pillow shape
  12. set aside on a tray and cover with a tea towel, cook just before serving
  13. fill a pot with water, bring to boil, add salt then cook gnocci in 2-3 batches for approximately 2 minutes for each batch, remove with a slotted spoon and drain
  14. transfer gnocci to sauce and serve immediately

Notes

Goes really well with capsicum sauce, white cheese sauce or any other simple pasta sauce
