Carrot Cake

Ingredients

250 mL vegetable oil
1 1/3 cup brown sugar
3 eggs
3 cup grated carrot (lots of carrots)
2 1/2 cup flour
5 tsp baking powder
1/2 tsp bicarb
1 tsp mixed spice

Equipment

Method

  1. Oven to 180C
  2. Grease and line 22cm cake tin
  3. combine oil, sugar and eggs and beat until thick and creamy
  4. stir in grated carrot
  5. sift flour, baking powder, bicarb and mixed spice over and fold in
  6. bake 1 1/4 hours
  7. stand in tin 5 minutes then turn out and cool on a wire rack
