Ingredients
    
        
        
            
                | 250 mL | vegetable oil | 
        
            
                | 1 1/3 cup | brown sugar | 
        
            
                | 3 | eggs | 
        
            
                | 3 cup | grated carrot (lots of carrots) | 
        
            
                | 2 1/2 cup | flour | 
        
            
                | 5 tsp | baking powder | 
        
            
                | 1/2 tsp | bicarb | 
        
            
                | 1 tsp | mixed spice |

    Method
    
    
        - Oven to 180C
- Grease and line 22cm cake tin
- combine oil, sugar and eggs and beat until thick and creamy
- stir in grated carrot
- sift flour, baking  powder, bicarb and mixed spice over and fold in
- bake 1 1/4 hours
- stand in tin 5 minutes then turn out and cool on a wire rack
