Serves9 7cm scones


2 cup self raising flour
60 g butter - soft
3/4 cup milk
1/2 tsp salt - preservative only if not eating today



  1. preheat oven to 200C
  2. put flour in bowl
  3. add butter in cubes and rub in
  4. add salt if not eating today
  5. pour in about 0.5 cups of milk and cut it into the flour with a butter knife
  6. add the rest of the milk a little at a time until you have a dry dough, depending on humidity you may need more or less milk
  7. tip onto well floured surface and kneed lightly then press flat about 2cm thick
  8. grease baking tray with butter or canola oil
  9. cut out scones and place on tray touching each other
  10. glaze tops with milk
  11. bake 8-15 minutes until golden


you can substitute 0.25 cups of water for some of the milk

for sweet scones add 1 tsp of sugar with the salt

serve with cream and jam or lemon butter
