ANZAC Biscuits

1 cup rolled oats
1/2 cup coconut (heaped)
1/2 cup plain flour (heaped)
1/2 cup sugar (heaped)
60g g butter
2 tbsp golden syrup
1/2 tsp bi-carb soda
1 tbsp boiling water



  1. preheat oven to 200C
  2. put rolled oats, coconut, plain flour and sugar in a bowl
  3. melt butter
  4. add boiling water and golden syrup to buttter and stir
  5. tip butter into dry ingredients and stir - should be sticky
  6. put baking paper on baking tray
  7. roll cookie dough into balls and place on tray with plenty of space unless you only want one cookie
  8. bake approximately 12 minutes
  9. remove from oven and leave to cool on paper
  10. peel cookies off paper and eat


store in an air tight box
