Ingredients

1 tbsp butter
3/4 cup sugar
1 lemon - rind and juice
1 cup milk
2 tbsp plain flour
2 eggs

Equipment

Method

  1. Cream butter and sugar
  2. Add flour, lemon juice and lemon zest
  3. Add egg yolks, then milk
  4. Stiffly beat egg whites
  5. Fold egg whites into mixture
  6. Pour mixture into pyrex dish, stand in water and bake at 180 for 1 hour
